
Halloween is just around the corner and I got the perfect healthy recipe for you! These zucchini mummy pizza are so delicious and I know it will be a fun activity for family and friend on Halloween! If you’re finding this recipe and it not Halloween anymore, well it’s still a delicious, easy recipe to make anytime of the year!
I made my dough from scratch, but don’t be intimidated because it only requires 3 ingredients and about 20 minutes of your time! All you have to do is mix together some all purpose flour, Greek yogurt, and baking powder! Then boom, you have your self some homemade pizza dough!

Is this pizza vegan and gluten free?
While the pizza I made was neither of those things, they can easy be made vegan and gluten free. Sub the all purpose flour with gluten free all purpose flour, Greek yogurt for vegan Greek yogurt, cheese for vegan cheese, and make sure you are using vegan pesto! I love the vegan kale and basil pesto from Trader Joes!

Key Ingredients for this zucchini mummy pizza recipe:
- Flour
- I used all purpose flour, but you can sub with gluten free all purpose flour if needed. If you have self rising flour then you don’t need to include the baking powder.
- Greek yogurt
- This has to be Greek yogurt or vegan Greek yogurt! It will not work with regular yogurt because the dough will be to stick to work with.
- Zucchini
- Slice the zucchini really thin with a vegetable peeler! If you are not a fan of zucchini then leave it off!
- Pesto
- I choose to use pesto as the sauce because it goes with the green mummy vibe! You can totally sub with your favorite pizza sauce.
- Cheese
- I used shredded mozzarella cheese! Vegan cheese will work great as well.
- Olives
- Honestly, I’m not a fan of olives, but they make great eyes for the mummies! There is always someone who loves olives so pick them onto their plate!
- Dan O’s seasoning
- This seasoning is all natural, zero sugar, and gluten free! It is definitely my go to for a quick weeknight dinner!

Zucchini Mummy Pizza
Ingredients
Pizza Dough
- 1 cup all purpous flour
- 1 cup Greek yogurt or vegan Greek yogurt
- ½ tsp baking powder
Zucchini
- 1 zucchini
- Spray avocado oil
- ½ tbsp Dan O's original seasoning
Toppings
- ½ cup shredded cheese vegan shredded cheese
- 6-7 tbsp pesto
- 12-14 sliced black olives
Instructions
- In a large mixing bowl, mix together the flour, baking powder, and Greek yogurt until a frim dough forms. Let rest for 15-20 minutes.
- Next slice up the zucchini into thin slices using a vegetable peeler. Dab with a paper towel to remove the excess moisture. Slice the zucchini strips in halt long ways. Spray with some avocado oil and season with Dan O's seasoning.
- Roll the pizza dough out to a quarter inch thick. Cut into rectangles using a pizza cutter. Repeat this step until all the dough is used up.
- Top each rectangle with some pesto and cheese. Then layer the zucchini slices to make a mummy pattern. Finish with some olive at the top of the rectangle for the eyes.
- Bake at 400F for 15-20 minutes!
