Preheat the oven to 350F.
In a large mixing bowl, mix together the water, almond milk, coconut oil, vanilla extract, coconut sugar, and maple syrup.
Now add in the the dry ingredients (oat flour, baking soda, salt, cocoa powder). Mix until well combined.
Pour the batter about ¾ of the way full into a lined muffin tin. Bake for 16-18 ,minutes.
While the muffins are baking prepare the strawberries but cutting off the stem.
Wait for the muffins to cool completely, then add down a layer of whipped cream followed by the strawberry. Finish with a pompom of whipped cream at the top of the strawberry.
