
Today we are making vegetarian potstickers! I know you guys love my dumpling and wonton recipes, however they all contain some sort of meat. There are many vegan and vegetarian followers on my site so I wanted to make a potstickers recipe just for you guys (and even meat eaters since they are so delicious).
My favorite part about these vegetarian potstickers is that everything is already cooked. So, you don’t have to worry about making sure the center of the dumpling has been cooked through. The folding technique that I used for this potsticker recipe is super simple and you can get it down pretty quickly. The shortcut for this recipe is using a bag of coleslaw mix. It can be such a hassle to chop up cabbage and carrots into small pieces. For this recipe all you have to do is empty your coleslaw mix into a mixing bowl, take some scissors and chop them up into smaller pieces.
Another fun addition to this recipe for the sweet potato glass noodles. I love how it adds such a chewy texture to the filling! This recipe is also very customizable, you can use any vegetables you like as long as you cut them into smaller chunks. Broccoli, zucchini, and potatoes are also great options to add!
Key ingredients for these vegetarian potstickers:
- Coleslaw mix
- coleslaw mix is a huge time-saver when it comes to making these potstickers. I love using cabbage and carrots as my vegetables because it takes on any flavor that I want to add.
- Sweet potato glass noodles
- I love how these glass noodles add such a fun chewy texture to the feeling. I used this brand from Chung Jun One, and I found it at my local grocery store.
- Tofu
- I only used about one third of a block of tofu oh, and I crumbled it up to add to the filling.
- Soy sauce, vegetarian oyster sauce, sesame oil
- These are the key sauces that you need to add for the exceptional flavor burst. If you can’t get your hands on some vegetarian oyster sauce, you can always use hoisin sauce or more soy sauce.
- Green onion, ginger, garlic
- I like to call this the trifecta of Asian cooking. My mom always taught me to start my dishes with these three ingredients because they always add such a nice and rich flavor.

I picked these up from my local grocery store, but you can always find a ton at an Asian grocery store. I know Whole Foods has a great one from Nasoya.

Vegetarian Potstickers
Ingredients
Filling
- 12 oz coleslaw mix cut cup into smaller pieces
- 1 oz sweet potato glass noodles cut up into small pieces
- 5 oz tofu crumbled
- 2 tbsp soy sauce
- 1 tbsp vegetarian oyster sauce
- ½ tsp salt
- 2 cloves garlic minced
- 1 tsp ginger minced
- 1 stalk green onion diced
- 1 tsp sesame oil
Dumpling
- 25-30 circular dumpling wrappers
- 4 tbs water
Instructions
- Bring a pot of water up to a boil, and cook your sweet potato glass noodles according to package instructions.
- Once your glass noodles are done cooking, drain them and rinse with cold water. Place the noodles into a bowl and use scissors to chop them up into smaller pieces.
- Empty your coleslaw mix into a large mixing bowl, and use scissors to chop the coleslaw up into smaller pieces.
- In a large frying pan or Wok, add about 1 tablespoon of olive oil. Then add your garlic, ginger, and green onion. Sauté until fragrant.
- Next add your coleslaw, tofu, soy sauce, vegetarian oyster sauce, and sesame oil. Cook until the coleslaw has softened.
- Once the filling is done cooking, remove from pan and transfer it into a large mixing bowl. Allow for the filling to cool slightly, then add your glass noodles. Mix everything together then add a pinch of salt to the mixture.
- Get your wonton wrappers ready with a bowl of water on the side. Line the circular dumpling wrapper with water and place the filling and the center of the wrapper. Then fold the Dumpling wrapper in half pinching the top middle portion of the wrapper together. At each of the sides, make a V shape seal. Go see the video below for a visual.
- Once all the pot stickers have been wrapped, add 1 tbsp of olive oil to a pan. Place the potstickers end to the pan, then add about 1-2 tbsp of water and place the lid on the pan to steam the dumplings.
- Cook your dumplings for about 6-8 minutes making sure the bottoms are golden brown.
