Separately, tacos and pastas are definitely one of my favorite foods, so together they make a banging combination. If you haven’t tried this recipe, then you are definitely missing out! This taco pasta recipe is super easy, made in one pot, and makes great leftovers for the next day.

This recipe is perfect for weeknight dinners or a big dinner for a crowd! Everything comes together is less than 30 minutes and the ingredients are really simple. I guarantee everyone will love this, including picky eaters!

Key ingredients to Taco Pasta:
- Ground beef
- Ground beef is kind of a staple for my taco pasta recipes, but if you must, you can sub with ground turkey or chicken!
- Tomatoes
- For my recipes I used fresh roma tomatoes because I like the flavor of fresh tomatoes better than canned! However, if you have canned tomatoes handy, they will still work great!
- Beef broth
- I added a touch of beef broth to help make the sauce a bit thinner. It also adds a lot of savory flavor!
- Corn strach slurry
- To be honest this wasn’t an original ingredient in my recipe, but I decided to added it because I like my pasta sauce more creamy and thick!
- Pasta
- This is where the recipe can diverge a bit, and you choose your favorite pasta. I used whole wheat spaghetti but you can use gluten free pasta, shells, fusilli… whatever!
- Cheese
- I added cheddar cheese because I think that pairs well with the taco flavor! You can always add more than the recipe calls (there is no such thing as too much cheese).

Taco Pasta
Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 2 tbsp taco seasoning
- ¾ cup white onion diced
- ½ cup bell pepper diced
- 1½ cup diced tomatoes
- ½ cup beef broth
- 1 tbsp cornstarch + 2 tbsp water
- ½ lb pasta I used whole wheat spaghetti
- ½ cup cheddar cheese
- ½ tsp sugar
Toppings
- Avocado
- Sour cream
Instructions
- Start by brining a pot of water up to a boil. Once the water is boiling cook your pasta.
- In the meantime prep the onions, bell pepper, and tomatoes (if not using canned).
- Heat a large pot on medium high heat, and add in the olive oil. Then add in the onions and bell peppers. Cook until soft.
- Now add in the ground beef and season with the taco seasoning. Once the beef is almost cooked through, toss in the tomatoes, beef broth, sugar, and cornstarch slurry. Let simmer for 10 minutes.
- Fold in the cheddar cheese, followed by the cooked pasta.
- Serve with some avocado and sour cream!
