This is another festive and nutritious way to start off your day. These sugar cookie baked oats are so easy to make, which makes it perfect for busy mornings! I added some vegan vanilla protein powder to this baked oats recipe to add some flavor and more filling!

The recipe is super simple and only requires 7 ingredients! If you have tried any of my other baked oats recipes, then you know that the base recipe is pretty much the same! The possibilities are endless when it comes to flavor variations, so you will always have something new to try in the mornings!

My favorite part of this recipe is definitely the sprinkles! I used some red and green sanding sugar to add a Christmas spin!

- Gluten free oats
- I like to make my oat flour at home by blending up some gluten free oats. Just make sure that the out flour is very fine.
- Almond milk
- Use your favorite plant milk! Make sure it is sugar free, because some plant milks can load up with sugar!
- Baking powder
- This helps the oats get a nice cake like texture.

- love adding protein powder to any of my oatmeal recipes in the morning. The flavor addition is awesome as well as the extra protein. Here are some of my favorites: Orgain, Vital Proteins, Primal Kitchen, Purely Inspired.
- Almond butter
- I LOVE the almond butter core for this recipe! You can sub with peanut butter, cashew butter, or any seed butter!
- Sprinkle!!
- I used some sanding sugar from Indian Tree. They make all natural sprinkles with no artificial colors!

Sugar Cookie Baked Oats
Ingredients
- 1 cup gluten free oats
- 1 cup almond milk
- 1 tsp vanilla extract
- 1 tsp baking powder
- 2 tbsp vegan vanilla protein powder
- 1 tbsp almond butter
- Sprinkles!
Instructions
- Preheat oven to 350F.
- Blend up the gluten free oats in a high speed blender. Then add in the baking powder and protein powder. Blend until combined.
- Add in the almond milk and vanilla extract. Blend to combine.
- Add the batter to a greased baking pan and addd the almond butter to the center of the batter. Top with sprinkles and then bake for 25 minutes.
- Allow to cool then enjoy!
