
Noodle recipes have my heart, and this spicy peanut miso noodles recipe might be my new favorite. If you don’t know this already, my favorite food is by far peanut butter, and I try my hardest to incorporate it into as my recipes as I can!
I love this recipe because it come together in under 20 minutes, and it stores really well in the fridge. You can enjoy these noodles straight out of the fridge, or heat them up. It is delicious both ways!
What are the best kinds of noodles for this recipe?
There isn’t really a right answer here because this sauce pairs well with a variety of noodles. My favorite is probably rice noodles but here are a few that I think will work best:

Key ingredients for spicy peanut miso noodles:
- Peanut butter
- This ingredients makes the sauce extra creamy! You can also sub with almond butter or tahini for allergy reasons!
- Miso paste
- Miso paste is made out of fermented soy beans, and it adds a salty umami flavor to the dish! It is commonly used in Japanese recipes like udon noodles or miso soup.
- Black vinegar
- Black vinegar is common in Chinese cooking, especially in noodle or dipping sauces. If you don’t have any on hand you can sub with rice vinegar or white vinegar.
- Sambal Oelek
- This is a chili paste that you can find in any grocery store now a days! I like to use the chili garlic one!
- Soy sauce
- I definitely recommend using low sodium soy sauce since the miso paste already carries a lot of the salty flavor. If you want to keep it gluten free use tamari.
- Bok Choy
- This is my favorite vegetable and it is super easy to prepare! All you have to do is saute it up with some oil and salt, and it’s done in under 5 minutes.

Spicy Peanut Miso Noodles
Ingredients
- 4 oz brown rice noodles
Sauce
- 1½ tbsp peanut butter
- 2 tbsp miso paste
- 1 tsp black vinegar or rice vinegar
- 1-2 tsp sambal oelek
- 2 tbsp low sodium soy sauce or tamari
Bok Choy
- 3-4 bunches bok choy
- 2 cloves garlic minced
- ¼ tsp salt
- 1 tbsp olive oil
Protein toppings
- Egg
- Tofu
- Chicken
Instructions
- Bring a pot of water up to a boil and cook the brown rice noodles according te package instructions.
- In a large serving bowl mix together all the ingredients for the sauce.
- Prepare the bok choy by cutting the stem end off. Then in a large skillet add the olive oil and garlic and sauté until fragrant. Toss in the bok choy and cook until softened. This takes about 5 minutes.
- Rinse the brown rice noodles with cold water, then toss them in the sauce.
- Top with the bok choy and your choice of protein!
