
Get ready for today’s recipe because it will blow your socks off! I swear this cookie is by far my favorite single serve recipe I’ve made to date! If you have ever tried any cookie from Crumbl Cookies you know how rich and thick those can be! I wanted to create a healthier copy cat version of their cookies and cream cookie because why not.
What makes this cookie healthier?
Instead of using all purpose flour I swapped it with some gluten free oat flour. Oats are extremely high in fiber and have a variety of antioxidants that have many health benefits. I also added a scoop of protein powder so that you can get an extra kick of protein in for the day! For the sweetness, I used some maple syrup in stead of cane sugar or corn syrup because it is a natural sweetener lower on the glycemic index.
Key ingredients for this single serve cookies and cream cookies:
- Gluten free oat flour
- I like to make my own oat flour by blending up some rolled oats. You can also find premade oat flour in the store!
- Vanilla protein powder
- I love using the vegan vanilla protein powder from Orgain! It is by far my favorite vanilla flavored protein powder.
- Oreos
- This is must for cookies and cream! There are gluten free Oreos out there and other healthier chocolate sandwich cookies out there like this one from Back to Nature.
- Maple syrup
- Maple syrup is my favorite liquid sweetener. You can also sub with blue agave nectar!
- Coconut oil
- This is what keeps the cookie super moist and chewy after it bakes! You can also sub with avocado oil or vegan butter.
- Vegan Greek yogurt
- I love using the vegan Greek yogurt from Kite Hill. I would advise to stay away from sweetened versions because they have a lot of added sugar.
- Almond milk
- This is an optional ingredient and use it only if the batter is too dry.

Single Serve Cookies and Cream Cookie
Ingredients
Cookie
- ⅓ cup gluten free oat flour
- 1 scoop vanilla protein powder
- ¼ tsp baking powder
- ¼ tsp salt
- 1 crushed Oreo
- 2 tbsp maple syrup
- 1 tbsp coconut oil
- 1 tbsp almond milk more or less depending on consistency
Frosting
- 2 tbsp plain or vanilla vegan Greek yogurt
- 1 crushed oreo
- 1 tsp maple syrup
Instructions
- Preheat the oven to 350F.
- In a medium size mixing bowl combine the oat flour, protein powder, baking powder, and salt. Whisk that all together until everything is well combined.
- Now add the maple syrup and coconut oil. If the batter is too dry add in some almond milk.
- Fold in one crushed up oreo.
- Form the dough into a ball shape and bake it for 8-10 minutes.
- While the cookie is baking mix together the vegan Greek yogurt, Oreo crumbs, and maple syrup.
- Allow for the cookie to cool completely before topping with the frosting. Lastly, sprinkle on some crushed Oreos!
