

I think these might be my favorite muffins I’ve made to date!! Lemon poppy seed has always been a favorite, but adding the raspberry on top is such a special bonus!! These guys are a little healthier because I decided to use whole wheat flour and Greek yogurt? Now, this recipes is not vegan however you can easily make it vegan by swapping out the eggs with flax eggs (2 tbs flax seed meal + 5 tbs water), and swapping the Greek yogurt with come vegan Greek yogurt. I love the one from Kite Hill. I also have gluten free muffin recipes that are delicious as well!
