Protein Coconut Blueberry Baked Oats

I have been on a baked oats kick, and this protein coconut blueberry baked oats recipe might be one of my favorites! Baked oats are so versatile because you can eat them from breakfast, lunch, dessert, and even as a snack! It is basically eating cake, but it hits all the macros, and it is super nutritious. I love anything coconut and anything blueberry, so I though it was fitting to to combine the two!

There are a couple ways to make baked oats: either in the over or in the microwave. For this recipe I was running a little short on time, so I decided to pop it in the microwave. It worked out great, when I microwaved in 1 minute intervals for 3 minutes. You can also bake it at 350 for 20-25 minutes!

Key ingredients for this protein coconut blueberry baked oats recipe:

  • Gluten free oats
    • I like to make my oat flour at home by blending up some gluten free oats. Just make sure that the out flour is very fine.
  • Almond milk
    • Use your favorite plant milk! Make sure it is sugar free, because some plant milks can load up with sugar!
  • Baking powder
    • This helps the oats get a nice cake like texture.
  • Vanilla protein powder
    • I love adding protein powder to any of my oatmeal recipes in the morning. The flavor addition is awesome as well as the extra protein. Here are some of my favorites: Orgain, Vital Proteins, Primal Kitchen, Purely Inspired.
  • Shredded coconut
    • This adds a touch of coconut to the baked oats recipe! Yum!
  • Blueberries
    • I used fresh blueberries, but frozen works well too!

Protein Coconut Blueberry Baked Oats

This recipe only requires 6 simple ingredients and it comes together in less than 10 minutes. It makes the prefect quick breakfast in the morning or a sweet afternoon snack!

Ingredients
  

  • ¾ cup almond milk
  • 1 cup gluten free oat flour
  • ½ tsp baking powder
  • 1 scoop vanilla protein powder
  • 2 tbsp shredded coconut
  • ¼ cup blueberries

Instructions
 

  • In a microwave safe bowl mix together the oat flour, baking powder, protein powder, and coconut shreds until well combined.
  • Mix in the almond milk until all the lumps are gone.
  • Fold in some blueberries.
  • Top with fresh blueberries and coconut shreds.
  • Microwave in 1 minute intervals for up to 3 minutes.
  • Enjoy!

    How long and what temp would you bake this at?

      You can bake at 350 for 20-25 minutes. I microwaved mine in 1 minutes intervals!
