These peppermint brownie cookies are completely vegan and gluten free, but you would never know! I love the flavor combination of chocolate and peppermint, and it is perfect for the holidays. These cookies save well and make a great side to bring to parties.

These cookies are vegan because I kept the eggs out and used dairy free chocolate chips! Don’t worry because these cookies are still super ooeey gooey! The brownie cookies are also gluten free because I used gluten free all purpose flour instead of regular flour!

Key ingredients for these peppermint brownie cookies:
- Vegan dark and white chocolate chips
- I used dairy free chocolate chips from enjoy life! However you can use your favorite kind! My favorite part about these cookies is probably the white chocolate drizzle on top!
- Coconut oil
- Coconut oil keeps these cookies super gooey! You can also sub with some vegan butter or avocado oil!
- Granulated sugar
- I splurged and used regular granulated sugar, however, if you want to keep these refined sugar free then use some coconut sugar!
- Almond milk
- I like to use almond milk instead of water because it adds a creamier texture. Any plant milk or water will work here.
- Cocoa powder
- I love using Dutch processed cocoa powder because it has a richer chocolate taste!
- Vanilla extract
- Vanilla it a great compliment of the chocolate flavor.
- Peppermint extract
- This is the star of the show! I got mine from amazon!
- Peppermint candies
- Any peppermint candy will work like candy canes or the circular ones.

Peppermint Brownie Cookies
Ingredients
- 4 oz vegan dark chocolate chips
- 3½ tbsp coconut oil or vegan butter
- ⅔ cup granulated sugar or coconut sugar
- ⅓ cup almond milk
- 1 cup + 1 tbsp all purpose gluten free flour.
- ¼ cup cocoa powder
- ½ tsp baking powder
- ¼ tsp salt
- 1 tsp vanilla extract
- ½ tsp peppermint extract
- ½ cup vegan dark chocolate chips
- Candy canes or peppermint.
- Vegan white chocolate chips
Instructions
- Preheat oven to 355F.
- In a small mixing bowl mix together the chocolate chips and coconut oil. Place the bow in the microwave and microwave in 20s intervals until fully melted.
- In a larger mixing bowl mix together the the almond milk and sugar. Place in the microwave in 30s intervals. Mix in between each 30s until the mixture thickens and the sugar has dissolved.
- Combine the sugar mixture with the chocolate mixture with a whisk. Add in the vanilla and peppermint extract.
- Now add in the gluten free flour, cocoa powder, baking powder, and salt. Fold until well combined.
- Fold in the ¼ of chocolate chips.
- Scoop the dough with a cookie scoop, then flatten with your palms. Sprinkle on some crushed peppermint.
- Bake for 10 minutes.
- Once the cookies are done cooking, sprinkle on some more crushed peppermint and drizzle on some melted vegan white chocolate.
