
Todays recipe is a super quick and easy breakfast or lunch recipe! This loaded breakfast quesadilla took me a total of 10 minutes to make, and even less time to scarf down. I love making quesadillas and loading them with lots of fresh veggies and protein.
I was super excited to make this recipe because my tomatoes were finally ripe enough to eat! They were super juicy and sweet, and that is why I love using my own home grown vegetables! It just tastes so much better!
This recipe is prefect for meal prepping! I made a batch of these and put them in individual food containers for an easy on the go breakfast or lunch.

Key ingredients for this loaded breakfast quesadilla:
- Tortilla
- I used a whole wheat low carb tortilla that I picked up from Costco. I love how big they are, and they are only 100 calories each!
- Eggs
- I whisked up two eggs with salt and pepper! This was my protein sauce for this recipe. If you are vegan you can totally leave it out, however, I would suggest sautéing everything first then placing it into the tortilla. The eggs help the tortilla stick to the filling, so if there is no egg then the filling will not stick!
- Tomatoes
- I used my homegrown tomatoes and they were SO good!
- Spinach
- I love adding greens to my quesadillas and spinach works so well because it cooks really fast.
- Avocado
- I added the avocado last, so that it would not get too mush while everything was cooking!
- Cheese
- I choose to use mozzarella cheese, but you can use your favorite cheese. or ever vegan cheese!

Loaded Breakfast Quesidilla
Ingredients
- 2 eggs
- 4 slices of tomatoes
- 2 tbsp mozzarella cheese
- 1 handful spinach
- ¼ tsp salt
- ¼ tsp pepper
- ½ avocado
- 1 tortilla
Instructions
- Heat up a medium size frying pan. Then spritz in some cooking oil.
- Lay down the 4 slices of tomatoes and season with salt and pepper.
- Whisk the eggs together with some salt and pepper. Pour the mixture on top of the tomatoes. Now sprinkle on the cheese and spinach.
- Place the tortilla on top of the mixture and let it cook for about 1 minute.
- After 2 minutes flip the quesadilla so that the egg side is facing up. Finish with some avocado, then fold it in half.
- Slice it down the middle and serve!
