Key ingredients for these honey chipotle chicken meatballs:
- Ground chicken
- I used extra lean ground chicken, and found that these meatballs stayed together very well and juicy after baking! You can also sub with ground beef or turkey!
- Egg
- The egg helps the meatballs bind together and keep the meatballs super tender!
- Almond flour crackers
- I use almond flour crackers to keep this recipe gluten free! They work great in the keeping the meatballs moist and tender.
- Garlic and onion
- Garlic and onion add a touch of freshness to the meatballs!
- DanO’s Chipotle seasoning
- This seasoning is SO good! I love that it has a deep smoky/spicy flavor that is all encapsulated in one seasoning. It is so much easier to use one seasoning blend to pull out a bunch of different seasonings!
- Canned chipotle in adobo sauce
- This added the spice and smokiness! I love adding this to my sauce and a little bit of this goes a long way!
- Chicken broth
- I used chicken broth for the base of the sauce because it adds another lever of flavor to the sauce. You can also use water if you don’t have chicken broth on hand.
- Honey
- I added a dash of honey to give these meatballs a subtle sweetness. You can also use brown sugar or agave nectar!
- Corn starch
- Mix 1 tbsp of corn starch with 1 tbsp of water then add it to the sauce while it is still cooking. The cornstarch slurry needs to be hot for it to thicken.

Honey Chipotle Chicken Meatballs
Ingredients
- 1 lb ground chicken
- 1 egg
- ½ cup crushed almond flour crackers or panko breadcrumbs
- ½ onion diced
- 3 cloves garlic minced
- ½ tsp salt
- 1 tbsp DanO's Chipotle Seasoning
Sauce
- 1 canned chipotle adobo pepper
- 2 tbsp chipotle adobo sauce
- ½ cup chicken broth
- 2 tbsp honey
- 1 tbsp corn starch
- 1 tsp DanO's Chipotle Seasoning
Instructions
- Preheat oven to 375F.
- Combine the ground chicken, almond flour crackers, DanO's seasoning, garlic, onion, egg, and salt into a large mixing bowl. Mix with your hands until everything is just combined. Do not over mix.
- Using a cookie scoop, scoop the meatballs onto a lines baking sheet. Spray with some spray avocado oil.
- Bake for 20 minutes or until the internal temperature of the meatballs is above 160F.
- While the meatballs are baking, make the sauce by combining all the sauce ingredients together in a sauce pan. Cook until the sauce thickens.
- Allow the meatballs to cool slightly then transfer them to the pot and coat with the sauce.
- Serve with some rice and veggies, or on their own!
